Judith Vergara took her first steps in cooking when she was 12 under the guidance of her mother, in her beloved home town, Peru. Since she was little she admired her mother’s ability to prepare dishes with incredible flavours with only a few ingredients, and always seemed to her that she was doing “magic”. Her mother taught her everything she knows, from selecting the market’s best peppers to the exact seconds in which the garlic needs to be sautéed to get the best flavour. These memories are the inspiration and passion that motivate Judith to cook.

“Opening this restaurant was always my dream, keeping my mother’s essence alive, honoring her in every recipe, with every ingredient, and promoting the history of our town in the best way I can.”

Perusa is authentic Peruvian cuisine: simple ingredients transformed into delicious dishes for everyone to enjoy. With every dish that comes out of kitchen, we hope to bring our beloved Wall Township a little bit of our culture.
